I think it was more of a braised salmon than a poach since I didn’t submerge the fish in the cooking liquid. The topping on the salmon is a herb vinaigrette (tarragon and parsley). I pan roasted the asparagus and did the carrots potatoes and shallots in the oven.
Overall, I was happy that everything came out well and I didn’t burn anything. I’m still geting used to cooking three things at once. I would have liked some more crust on the oven roasted veggies, but they still tasted good. For the fish, I definitely prefer pan seared or broiled though.
Found a case of these @ a local Costco. Go and get some if you have a chance, it’s so much better than the American version.
First attempt at real Maryland Crabcakes. Used jumbo lump crab with scallions, parsley, and of course, Old Bay. Served with a side of freshly
made tartar sauce and a nice green salad. They held together pretty well
and tasted great.

Decided to be smart when food shopping this week and
got stuff for a bunch of meals that use common ingredients.
First up is a Corn Tortilla soup. Garnished with fresh avacado
and lime.

Next is Chilli con Carne with big chunks of beef, pinto beans and rice. Topped with jack cheese, cilantro, and sour cream.

Lastly is Huevos Rancheros complete with homemade salsa.
A lot of extra work, but worth it for the taste.

Marinated Skirt Steak with Eggs and Toast.
Breakfast of Champions!

One of the best burger’s I’ve ever had. Also the garlic rosemary fries are amazing. They also have some kick ass beer.
Steak & eggs, hash browns with sausage gravy, toast and grits. I love southern breakfast!
